I decided I would make banana bread since I had all the ingredients.
It is a fairly simple recipe and you can add in other ingredients as well! Walnuts, pecans, add more fruit like strawberries and blueberries, add different kinds of spices like pumpkin spice or other spices. So here is the base of the recipe and you can change it to your hearts content!
Ingredients:
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour
2 tablespoons of cinnamon (optional)
1 teaspoon of nutmeg (optional)
1 cup of pecans or walnuts (optional)
Preheat the oven to 350°F. With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. (Stir in optional ingredients last). Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.
I'm sure if you wanted to do a sweet compound butter with this or even a nice glaze would be great as well.
