Pan-Braised Carrots

My son loves carrots and loved these! He ate these for about three days straight.

Ingredients:
baby carrots or whole carrots cut up into small pieces
one or two tablespoons of olive oil depending on how much you are making
a few tablespoons of butter
a little bit of juice (lemon, lime, orange, etc)
Cast iron skillet but you can use whatever you have on hand
seasonings: salt and pepper, italian seasoning, Weber veggie grill

Melt butter in the oil and add the carrots
Cook for a few minutes until just about done (about six minutes)
Add in lemon juice
Add seasonings
Cook for another minute

Serve!
