Peppermint Bark

Here is the peppermint bark I made for the winter holidays last year. You can buy peppermint pieces already broken up at GFS.Which saves time, mess and loud noises and just about costs the same as well. You can use regular candy canes and just beat them up on the counter.
So here are the ingredients you will need:
Milk chocolate melted (I used Ghirardelli Chocolate)
Peppermint extract
Candy Canes (broken up)
Double boiler or melt chocolate in microwave
Wax paper

Melt chocolate with two tablespoons of peppermint extract (you can stir in some peppermint pieces if you like). Pour on top of wax paper and smooth out with a spatula.
Then sprinkle on peppermint pieces and stick the bark in the refrigerator for at least an hour.

You can do it with white chocolate as well.
And when you break it up into pieces it will look like this:
I gave them out as gifts:

This year I'm going to layer the two chocolates. I just didn't have enough milk chocolate last year. I am just having problems finding the white chocolate this year. I will keep looking.
I had a lot of fun making this and I hope you will too!

Update: So I was looking at Pinterest and a fellow pinner posted this to one of their boards:
from the blog "Once Upon A Plate" Once Upon a Plate Blog
You can find the mold here: Amazon.com

She uses a silcone mold for hers. You can click the link to get the full recipe. It's a good idea in case you didn't want to go "rustic" in your presentation!
